We have been working with Eli since the early days of Sweven, returning to his work on a number of occasions as he has continued to establish himself as one of Peru’s standout specialty coffee producers.

Originally from the highlands of Cajamarca, Eli followed his father to Chirinos in the early 2000s as the family began growing coffee. He initially worked on neighbouring farms to support his family, gradually saving enough to purchase his own small plot and plant his first Caturra trees. Today, Eli and his wife cultivate around four hectares at El Mirador, growing an increasingly diverse selection of varieties.

Since 2019, Eli has continually refined his approach to fermentation and drying, with natural processing becoming an important part of his work. His dedication has earned wider recognition, including an eighth-place finish at the 2020 Peru Cup of Excellence.

It has been incredibly rewarding to feature Eli’s coffees throughout our own journey, and this Etíope 47 is another beautiful example of the quality and character that continue to define his work.

Coffee Profile

Etíope 47 is a rare Ethiopian selection now cultivated in the highlands of Peru, bringing the distinctive floral character and fruit complexity associated with Ethiopian genetics into an entirely different terroir.

At El Mirador, the coffee is cultivated at approximately 1,750 metres above sea level. Only deep, ruby-red cherries are selectively hand harvested before being washed and floated to remove lower-density fruit. The whole cherries then undergo 48 hours of fermentation in tiled tanks.

Following fermentation, the cherries are briefly pre-dried in the sun before being transferred to raised beds inside a parabolic dryer, where they dry slowly for approximately 30 days. This careful approach allows the fruit character and sweetness of the natural process to develop while retaining beautiful clarity and balance.

In the cup, expect red grape, nashi pear and honeysuckle. Sweet and beautifully balanced, the profile combines crisp, juicy acidity with a refreshing fruit character and delicate honeysuckle aromatics.

This is a beautifully refined expression of Ethiopian genetics grown in Peru, and another exciting example of Eli’s continued progression as a producer.
