The Sidra varietal originates from the Pichincha province in Ecuador, particularly in the area where Cruz Loma is located. This relatively new variety has been developed through the crossing of Red Bourbon and Typica, making it well-suited to the humid conditions prevalent in Ecuador. The specific Sidra lot has been processed using the washed method. The coffee cherries undergo anaerobic fermentation for 12 hours, followed by pulping, washing, and drying on African beds within a polytunnel. This careful processing results in a delightful cup that not only highlights the varietal’s distinct qualities but also adds complexity due to the extended fermentation. We are thrilled to introduce this lot from Galo, marking our first purchase, and we look forward to sharing it with everyone.
Cruz Loma is an award-winning, family-operated farm that has been cultivating coffee for over two decades. In the past six years, the farm has shifted its focus towards specialty coffee production. Galo Morales, a former technician at Caravela, brings a wealth of experience to the farm, which he now dedicates entirely to its operations. Together with his wife, Maria Alexandra, they manage a pioneering establishment that has garnered numerous accolades in recent years. Additionally, Galo and Alexandra oversee their own dry mill located in the heart of Quito, where they maintain a laboratory dedicated to quality control prior to exporting their coffee. Their business emphasises the enhancement of knowledge and skills among their workers, providing free training and supporting career development in areas such as farming, processing, roasting, cupping, and commerce. Cruz Loma achieved 1st place in Taza Dorada 2022, 2nd place in Taza Dorada 2023, and 3rd place in the Cup of Excellence 2022.
