This specific coffee lot from Chelbesa, Gedeb, is cultivated at an altitude of 2200 MASL and has a total weight of approximately 38,400 kg, consisting of two indigenous varieties known as Dega and Wolisho. The finest cherries are selected, floated, and pulped. Following this, the coffee undergoes fermentation in tanks without the addition of water, which is why it is referred to as Dry Washed, and is subsequently dried for a period of 10 to 15 days. This processing technique guarantees the utmost quality of the coffee. After drying and storage, the coffee is transported to Moplaco in Gerji, Addis Ababa, before being shipped to Djibouti by train for export. The dry fermentation process significantly enhances the complexity of this lot, which is characterised by vibrant citrus and floral notes, making it an exceptional choice for an “every-day-cup”.

Ephtah is dedicated to ensuring quality throughout the entire shipping process, prioritising the delivery of premium green coffee beans while maintaining satisfaction among all participants in the supply chain. Chelbesa, situated in Gedeb, serves as a crucial coffee sourcing region where Ephtah exclusively leases and oversees the washing station. This facility in Chelbesa (Kebele), Gedeb (Woreda), is instrumental in processing high-quality coffee. The area is predominantly Christian, encompassing both Protestant and Orthodox communities. The farm covers an area of 2 hectares and is located at an elevation of 2150-2200 MASL. It employs 17 permanent staff members and hires an additional 150 workers during the harvest season, which runs from late November to January. The farm is equipped with 150 drying beds and specialises in cultivating Heirloom coffee varieties.
