This lot features indigenous Ethiopian Heirlooms sourced from the Guji region. The cherries are harvested by hand and subsequently sorted manually. They undergo wet fermentation for a duration of 24 to 72 hours, contingent upon weather conditions. Following fermentation, the coffees are washed in channels and graded by density in water. Beans with lower density, indicating inferior quality, will float and are discarded, while the denser, higher quality beans are categorised as premium lots. After fermentation, the coffee is soaked for six hours. It is then arranged in layers approximately 2 cm high, with adjustments made based on climatic conditions. The drying process spans 13 days, after which the coffee is hand-sorted for an additional 2 to 4 hours. This meticulous selection and fermentation process yields a bright, floral, and exceptionally enjoyable cup that we take great pleasure in sharing with our café guests.
The Siko washing station was established in 2017 and is located at an elevation of 2100 to 2250 meters above sea level in the Siko village of Uraga, Guji. This station procures cherries from approximately 500 local farmers, whose farms are also situated at similar high altitudes. The average size of the farmers’ plots ranges from 0.5 to 2 hectares. The region’s rich, fertile red soils, coupled with consistent sunlight, enable the skilled farmers to cultivate the high-quality coffee that we consistently seek. To systematically classify our Ethiopian coffees, our team developed a “flavour wheel,” assigning various flavour profiles to specific colours. This particular coffee is categorised under the “Kelloo” flavour profile, which translates to “yellow” in the Oromiffa language. This designation signifies a coffee that embodies the taste of yellow tropical fruits, floral notes, peach, and stone fruits, all of which can be experienced in this specific lot.
