Coffee processing takes place at Frinsa Estate, where the wet mill is located at an elevation of 1400 meters above sea level. The estate features a ventilated storage area and a dry mill, allowing for precise management of the coffee’s journey from harvesting to grading, sorting, and shipping. The Frinsa team possesses extensive knowledge of processing methods and adeptly addresses climate-related challenges to produce clean and transparent flavour profiles in their coffees. This specific lot consists of local Indonesian heirloom varieties, including Ateng Super, P88, and Borbor. The cherries are meticulously handpicked and sorted in flotation tanks to distinguish underripe cherries from those that are perfectly ripe. They are then placed in tanks for a controlled fermentation period of 96 hours, during which water is added to regulate the process. Following this four-day fermentation, the cherries are removed and slowly dried before being prepared for milling. Wildan has named this lot “Manis,” which translates to “sweet” in Bahasa and is also a term used to describe something or someone beloved by all. This coffee is processed by Wildan Mustofa and his spouse, Atieq, at their wet mill located in Frinsa Estate. Wildan Mustofa and his wife, Atieq Mustikaningtyas, initiated their first coffee venture in the Sindangkerta, Weninggalih region in 2010, which later developed into Java Frinsa Estate. Their dedication to quality distinguished them, as they concentrated on fully washed coffees, unlike many Indonesian producers who preferred wet-hulled techniques, even in the specialty coffee sector. Frinsa Estate is located in West Java, known locally as Sunda. Equipped with a wet mill, well-ventilated storage, and a dry mill, all positioned at an altitude of 1400 masl, they maintain complete oversight of their product from harvesting to grading, sorting, and shipping. Furthermore, in partnership with the coffee research centre, Frinsa Estate has engaged in extensive cultivation of various lesser-known cultivars, organising them into specific blocks on the farm. Due to the relative youth of both the farm and the trees, the flavour profiles of many of these cultivars are still being explored. In addition to their own coffee production, Frinsa Estate also processes coffee for local smallholders, typically sorting by region. This initiative not only positively impacts the community socially and economically but also fosters sustainable long-term benefits, including water conservation and reforestation efforts.
