Winner of the Chinese Barista Championships, this unique lot referred to as “Red Sparrow,” after a small bird native to Gaoligong Mountain, is made up entirely of the ripest cherries from the Catimor varietal. The cherries are meticulously re-picked using flotation techniques. Once selected, they are transferred to a large fermentation tank, where they undergo fermentation for 48 hours at a controlled temperature of 22 degrees Celsius. After fermentation, the cherries are sun-dried for around 30 days. This careful selection and processing approach results in exceptionally high-quality green beans, which left us in awe when we first opened the sack for quality control and profiling. The cup delivers a unique experience, beautifully narrating the story of the Catimor varietal and the Chinese terroir, with a subtle tanginess derived from the fermentation process. It has been eight years since Mr. Wang, affectionately known as Lao Wang in Chinese culture, embarked on his journey in the coffee industry, processing his inaugural batch. Raised in Baoshan, he was significantly influenced by his parents, who often extolled the virtues of Baoshan’s small-bean coffee. This led him to ponder whether Yunnan could produce coffee of similar excellence. Consequently, he resolved to return to his hometown and explore the coffee-producing regions of Baoshan, Yunnan, to inform his decision. Between late 2016 and early 2017, Lao Wang drove his father’s car and managed to visit approximately 80% of the mountains in the Lujiangba area of Baoshan. Ultimately, he discovered Red Dragon Estate, where the impressive altitude of the farmland, reaching 1,887 meters, left a lasting impression on him. At Red Dragon Estate, he encountered Uncle Yang, a lifelong coffee cultivator. Uncle Yang’s unwavering dedication and passion for coffee deeply resonated with Lao Wang, solidifying his decision to partner with Red Dragon Estate. Despite having no financial resources, Lao Wang assured Uncle Yang that he would pay above-market prices for their fully ripe cherries and provide free seedlings of new coffee varieties.
